History
The darbazi (დარბაზი) is a traditional Georgian dwelling, partly dug into the ground, with a stepped wooden roof, the gvirgvini, that rises in rings of beams to a smoke hole at the top.
Bread was baked in the tone (თონე), a round clay oven sunk into the floor. The long shoti loaf baked on its walls is still sold across Georgia.
